Peppermint Meltaways Recipe

Hello friends!  I'm going to deviate a little today from my usual posts and share a delicious Christmas recipe that you all should make!  An inspiring blogger named Kelly over at Live Laugh Rowe posted this recipe, so I'm giving her all the credit.  These cookies are simply divine and literally melt in your mouth!  They truly live up to their name! Enjoy!

Cookie Ingredients

  • 1 cup butter, softened

  • ½ cup powdered sugar

  • ½ teaspoon peppermint extract

  • 1-1/4 cups All-Purpose Flour

  • ½ cup Corn Starch

Glaze Ingredients

  • 1-1/2 cups powdered sugar

  • 2 tablespoons butter, softened

  • ⅓ teaspoon peppermint extract

  • 1 to 2 tablespoons milk (depending on desired amount of creaminess)

  • candy canes, crushed

Instructions

  1. Combine butter, powdered sugar and 1/2 teaspoon peppermint extract in large bowl. Beat at medium speed until creamy. Next, add flour and cornstarch and beat at low speed until well mixed. Cover and refrigerate til firm (about 30 minutes to 1 hour).

  2. Shape rounded teaspoonfuls of dough into 1-inch balls. Place 2 inches apart onto ungreased cookie sheets. (I used my Pampered Chef Cookie Scoop and Stoneware Large Bar Pans, and they worked like a charm!)

  3. Bake at 350 degrees for 12-15 minutes, or until edges are lightly browned. Remove from oven, and then with a small spoon, gently press down the top of each cookie so it'll hold that yummy glaze. Next, place cookies on cooling rack and cool for about 5 minutes.

  4. Drizzle glaze over cookies. To make glaze, combine powdered sugar, butter, peppermint extract and milk in small bowl. Using a small spoon, scoop desired amount of glaze and let the glaze "slide" off the spoon onto the cookies to give that "gourmet chef" look. Or you can just do what I did, and pour a lot of glaze on each cookie! (The glaze is what makes the cookie taste so moist!) Immediately, place crushed peppermints on top.
